Crispy Pan Börek with Soda

I have been too lazy on writing my blog recently and have not been writing any new recipes, we had a weekly residential cooking course recently and did some new recipes here is one of them and I will post about the weekly course later.







This is an easy form of "Borek" that is made with "yufka" (filo pastry)

Ingredients ;
5 sheets of Yufka (filo pastry if you are buying in packs it should be 1 kg)
Stuffing
250 grams of ground beef
2 large patatoes diced very thin
1 onion chopped
1 bunch of parsley
salt & pepper to taste
a pinch of fenugreek
1/2 cup sparkling water

Batter
3 eggs
1/3 cup vegetable oil
1/4 cup olive oil
1 cup milk


To make this recipe, add 2/3 layers of filo dough to the bottom of a pan greased with butter. Pour half of your egg batter onto the layers, covering everything. Add your filling next. Spread it evenly around. Add 2 or 3 more layers of filo pastry over the top and pour the remaining batter on top. Take a knife around the edges to tuck everything in! Pour sparkling water over the top and add sesame seeds too! Bake at 350 for 30 min or until golden brown. 

I like to make this with my cooking classes, or any time I'm feeling lazy. The incredible part is that really, you can add anything to the middle of this beautiful dish. Sometimes I use a nice mix of leftover cheeses with dill and parsley, sometimes leftover meat and veggies. Let the flavors you have inspire you to make a wonderful creation!
